Tarte Tatin Recipe: A Classic French Dessert

  2. Add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. For the filling: In a large skillet, melt the sugar over medium heat, stirring constantly, until it turns a dark caramel color.
  4. Remove the skillet from the heat and add the butter, stirring until it is melted and well combined with the caramel.
  5. Arrange the apples in a circular pattern in the skillet, covering the bottom of the skillet and pushing them together tightly. Return the skillet to the heat and cook the apples, turning them occasionally, until they are tender and the caramel is thick and bubbly, about 15-20 minutes.
  6. Preheat the oven to 400°F (200°C). On a lightly floured surface, roll out the pastry dough to a thickness of 1/8 inch (3 mm). Place the dough over the apples in the skillet, tucking the edges down into the skillet.
  7. Bake the tart for 20-25 minutes, or until the pastry is golden brown and the apples are tender and caramelized. Remove the tart from the oven and let it cool for 5 minutes. Invert the tart onto a serving platter or plate, and serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
