- 4 medium-sized squash (such as zucchini, yellow squash, or acorn squash)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked quinoa
- 1 cup cooked and crumbled sausage (optional)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1 teaspoon black pepper
- Preheat your oven to 375°F. Line a baking sheet with parchment paper and set aside.
- Cut the squash in half lengthwise and scoop out the seeds and flesh with a spoon. Place the squash halves cut-side up on the prepared baking sheet and brush with olive oil. Bake for 25-30 minutes, or until the squash is tender.
- Meanwhile, in a large skillet, heat the remaining olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the quinoa, sausage (if using), mozzarella cheese, parsley, salt, and pepper. Mix well and cook until the cheese is melted and the filling is heated through.
- Remove the squash from the oven and fill each half with the quinoa mixture. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Stuffed squash can be served as a main dish or as a side dish. It is a versatile dish that can be adapted to suit your taste and dietary needs. For a vegetarian option, you can omit the sausage and add additional vegetables, such as diced bell peppers or mushrooms.
