  10. Remove the ramekins from the baking dish and let cool to room temperature.
  11. Once cooled, cover each ramekin with plastic wrap and refrigerate for at least 2 hours, or overnight.
  12. When ready to serve, sprinkle 1 tablespoon of sugar evenly over the top of each custard.
  13. Using a kitchen torch , caramelize the sugar until golden brown, rotating the ramekin to ensure even caramelization. Let the caramel cool and harden for a few minutes before serving.
