Chicken Marsala Recipe

  1. Prepare the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper. Place the flour in a shallow dish and coat the chicken breasts in the flour, shaking off any excess.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, or until golden brown and fully cooked.
  3. Make the sauce: Remove the chicken from the skillet and set aside. Add the mushrooms to the skillet and cook for 2-3 minutes, or until they release their moisture. Pour in the Marsala wine and chicken broth and stir to combine. Bring the mixture to a boil and then reduce heat to low. Let the sauce simmer for 5-7 minutes, or until it has reduced by half and thickened slightly.
